ICAR-CPRI has developed this technology to produce gluten-free cookies from whole potatoes, including the peel. These cookies are rich in fibre, potassium, and calcium, low in sodium, and suitable for all types of potatoes. This innovation reduces post-harvest losses while offering a new product for consumers, including celiac patients.
